The Oaxaca Learning Center-El Centro de Aprendizaje- is many things. As the name suggests, it is predominantly a place where young people from the City of Oaxaca and outlying villages can further their education and personal development through tutoring, mentoring, and work-study opportunities.Most of these young people (primarily ages 14-24) come from environments that are not conducive to learning. Especially for those coming from rural villages, the transition to city life can be overwhelming at first. Although Oaxaca offers a range of educational opportunities, free tutoring support is almost nonexistent. Open seven days a week, the Learning Center fills that void and becomes a home away from home for these students, offering them the academic, financial, and deeply personal support that allows them to pursue their dreams.It is very much in keeping with the spirit of the Center that we would want to share these recipes with a broader community. It is also in keeping with the bilingual nature of the Center that the recipes are presented in both Spanish and English.What sets this Mexican cookbook apart from others is that it is entirely vegetarian. Although vegetarian cooking is not widely practiced in Mexico, more and more young Mexicans are looking at healthier dietary options. Most traditional Mexican recipes are laborintensive and complicated.
